If using a gas or charcoal grill, set the grill up for indirect heat cooking. Preheat grill or smoker to 225°F.
Season roast with Santa Maria Seasoning. Place seasoned roast on grill or smoker rack and cook for 3 hours or until the internal temperature reaches 150°F.
Place onions, garlic, and peppers in a medium foil pan. Add beer and Worchestershire sauce to vegetables and stir to mix. Place roast in the center of the pan on top of the onions and peppers. Cover tightly with foil and return to the grill. Increase temperature of the grill or smoker to 275°F and smoke until the roast is tender and the internal temperature is 200°F (about 3 hours).
Allow to rest 20 minutes before slicing and serving.
